Big Life Local: Alex Tolger - Kitchen Collab

Big Life Local Alex Tolger created a shared kitchen space called Kitchen Collab, Tahoe – Truckee’s only commissary kitchen in fall 2018. Their building includes shared office space, a 2000 sq. ft. kitchen facility, a conference/ private dining room, and a large drive bay that can transform into event space. Over the past few years (pre-COVID), it has been the site of many wonderful pop-up dinners, including art, cuisine, and music fitting around a theme, such as Mardi Gras, as well as hosting fundraisers for local nonprofits. Alex, his company Mogrog, and other chefs also worked together to provide free meals for locals in need during the pandemic.

After working for five years as head Chef at Drunken Monkey and one year at FiftyFifty Brewing Company, Founder Alex Tolger began to pursue the idea of creating a commissary kitchen space for local culinarians to launch, legitimize and grow their burgeoning businesses. By providing state-of-the-art kitchen space, help with licensing and insurance, and educational classes such as ServSafe, they’ve strengthened our local food community and removed the barriers that prevent people from growing their business in Tahoe/Truckee.
